The BOMB "Spinach Artichoke Dip"

Let me start by saying, "By far the BEST Artichoke Dip out there" !

Yes...I must be a little insane to pass this Recipe on, but I want others to experience the Joy, Love & Deliciousness of this dip. I have had numerous opportunities to share this w/ my friends & family and it never disappoints. I guarantee you haven't tasted better...

Spinach Artichoke Dip:

- 2 boxes frozen chopped spinach
- 3/4 stick of butter
- 1/2 white onion (chopped)
- 8-10 cloves of garlic (minced)
- 2 8 oz cream cheese (cut into cubes)
- 1 16 oz sour cream
- 1 cup shredded Romano cheese
- 1 cup shredded Parmesan cheese
- 2 cans Artichoke Hearts (Artichoke Bottoms & Quarters work well chopped)
- 8 oz grated Monterrey jack cheese
- Tabasco Sauce for taste 8-10 drops

Cook frozen spinach according to package directions, drain well (this is key). In separate nonstick pan, melt 3/4 stick butter. Saute garlic & onions in butter until clear. Add ingredients in the following order (mixing well after each one); Spinach, Cream Cheese, Sour Cream, Romano Cheese, Parmesan Cheese, Artichoke Hearts. Add 8-10 drops of Tabasco. Mix well and place in microwavable dish. Top with 8 ox grated Monterrey jack cheese. Microwave on high for 15 minutes.

Serve with tortilla chips...you can tell me later how much you enjoyed this !!!

So nearly three weeks later I am finally posting the pix-n-a video from the night my nephew, Micah, and I baked sugar cookies. I cannot tell you how many times I hear single friends of mine complaining about how they can't (or don't) get to do fun things with little ones since they're not yet parents. What do I say to that? That I'm sure there are plenty of little ones in or around your life some way or another to shoot that theory right out of the water! Now granted I do tend to lean on the complaining side of not being married for laborings sake, but even that has it's place. Ratatouille???

I don't know about you but I have love, love, loved the rain that has finally kissed us with it's sweet lips. Surprisingly, this morning's rain came with some pretty fierce wind, which having just moved here from Oklahoma (where the winds come crashing through the plains), it somewhat threw me for a loop. After enjoying the sounds of rain from inside the house while working in the garage, I decided I wanted nothing more than to eat something warm and somewhat soupish.
