Ginger??? Schnap!!!

The flight from Orange County to Seattle proved to be simple--short, but sweet.  The walk in my Stiletto Low-Cuffed-Booties from SeaTac/Light Rail Station to the Condo on the other hand, was cold, wet and long.  Boy was my arm burning--pulling my tightly-packed clothing for seven days proved to be quite muscle-defining.

Arriving on the 14th floor of the Elektra left me chilly and ready for something warm as I looked out onto the beautiful gray native to Seattle.  Shortly after dressing down from my "I'm traveling-on-a-plane-and-I'm-single" look, I threw on some much flatter riding boots and headed straight for to Pike Market, where I singled out the greenest, most gorgeous produce pieces of Ginger, Celery, Broccoli, Carrots, Garlic, Onions and Cilantro from their Farmer's Market to whip up my Chicken soup!

The streets of Seattle, still wet from an earlier drizzle, were filled with people, each with a mission of their own.  Though Seattle-ites are a proud breed, there is a kindness to them that draws even the native Californian to their more gentler ways...for this, I was most grateful!  They are as kind as Seattle is Green!  I have to say, this does not help one who, like me, loves giving living somewhere new, a try!

Back to the food.  Arriving back to our temporary abode, I quickly filled the pot with water, turned on on the pan to saute the onions, garlic and ginger, tossed in the Bouillon cubes once the water began boiling, tossed in both, the sauteed veggies, along with two boneless pieces of chicken and carrots, lowering flame.  Once chicken has had enough time to cook (about twenty minutes), I added fresh-cut celery about ten minutes into it, then adding the Broccoli about five minutes to finish.  I normally add Kale, but Shanda already bought some for soup she was making for Thanksgiving.  I topped this savory and flavorful soup with cilantro as I served myself the soup to full and almost-overflowing on the not-so-cute-but-furnished-dinner plates and bowls.  My roomie meanwhile primped up a batch of Cornbread--southern-style...yum-may!

To tie in the meal, and with a single pillar candle lit, Pandora filled the living room with the Christmas tunes with the likes of Harry Connick, Jr., Michael Buble and the Rat Pack.

This soup must have hit the spot, as soon as I was done, I sat on the sofa, put my head on it's arm, and next thing I knew, I woke up to 4 a.m. and a beautifully lit Seattle through all three surrounding windows.    To say the least, this dish more than hit the spot!  I had some the next day, and am craving it even now.

Ingredients:
Bouillon Cubes
Fresh Ginger
Yellow Onions
Garlic
Broccoli or Kale
Boneless Chicken
Carrots
Celery
Cilantro

Cooking time:  20 - 25 minutes

Babysitting-Turned-Baking!!!

So nearly three weeks later I am finally posting the pix-n-a video from the night my nephew, Micah, and I baked sugar cookies. I cannot tell you how many times I hear single friends of mine complaining about how they can't (or don't) get to do fun things with little ones since they're not yet parents. What do I say to that? That I'm sure there are plenty of little ones in or around your life some way or another to shoot that theory right out of the water! Now granted I do tend to lean on the complaining side of not being married for laborings sake, but even that has it's place. Now I realize that some may not be as blessed as I have to a handful of nieces and a nephew to enjoy such things with, but if you have no friends in your life with kids, feel free go out of your way to spend time with those who may need you in their lives. A Single Mom Bakes and Tells...

For some baking comes easy, for others not so much. Single mom, Maxine Stevenson, shares a quick recipe for that sweet-tooth that may come at any time of your day! Now my suggestion to you would be to take a trip to the market for these ingredients and/or bakeware if you don't already have them--Pampered Chef has some great stoneware (link to where you can order your first stoneware provided below). Of course you can always cheat and bake the cut-n-bake cookie dough already made for you, but why go there if you can at least chef it up on your own with a recipe that'll not only have you eating that soft, chewy cookie (or golden brown) in less than 15 minutes, but will also leave you feeling like a pro! Besides, everyone can always use a little practice in the baking department...and what better way to make amends, say thank you or "wink" at someone, than to bring them a little tray of treats the next morning?
