Though we're both in the same age-range, Max has fed me more times than I'd care to tell...so I won't. But what I will say is that I took this morning's invite as an opportunity to do a little of the same. I was gonna make us another egg-white omelet with Tofurkey Italian Sausage, Melange a Trois (frozen bell peppers) and cheese, served with veggie sausage and tortillas. Of course, she came over with her daughter and Starbuck's in tow, while I was cooking' with my Jazz Classics going, coffee brewing and feet dancin'. Nice thing about this morning was that I still managed to spend time with the hermanas-via-Skype...and get in some good old "girl-time"...really, for this single, it was the perfect way to spend my Saturday morning! She seemed to have enjoyed it as there was none left, but then again, who's looking?
Today's recipe was so simple, all I'm jotting down are the ingredients. It took me about ten minutes in all to make...this morning I just chopped, sauteed and fried until my heart was jumping with sheer excitement. Then, it was time to eat...not bad for a barefootin' nanny!
Ingredients:
Reddi-Egg (Egg whites in a liquid carton/container)
Frozen Bell Peppers
Shredded Mexican Cheese
1 Tofurkey Italian Sausage, sliced
Olive Oil
Side dish: Tortillas and Morning Star Farms Breakfast Sausage
