Trying to relocate my life to Los Angeles has been a major adjustment. For one, I forgot the external pressures of what it means to be a thirty-something-single female in the city of Angels--meaning that my size 10's and sometimes 12's are NOT the norm in a town where thick is not acceptable! While I am preparing the soil for my official return home to Tinseltown, I must now face the hard facts--I can no longer eat breakfast burritos steaming with fried potatoes, melted cheddar cheese, re-fried beans and egg whites with a side of chilied-carrots and a large Coke. It is time to turn to something much healthier on the heart, the body and for now, the ego.
This state of being is somewhat daunting as not only is it my goal to get healthy again, I have got to also shed some pounds and tone--the big 40 is less than one year away, so carbs can no longer be my best friend. I was really hoping that my rejoining 24-Hour Fitness would be sufficient, but let's be real here. There is no way I'll ever be anything less than soft if I continue to eat the ever-so-softening foods--you know the ones...bread, pasta, sugar, deep fried stuff. The ones that make me coo while when we're partying in my mouth, but then are true to form in that the button pops open only too often, afterwards.
So now it looks like we're back to the old. Although many in my world would say to forget the former things of old, the former things for me included the disciplines of eating right, exercising and feeling great! That being said I'm going to have to retrain myself to preparing healthier versions of the dishes that could very easily fill me up for the day! Now keep in mind that while I'm not new to cooking, I'm no Rachel Ray, either. I'm the kind who likes to have the "look" of a chef (whatever that looks like), while not quite knowing for sure how my dish will turn out! This morning's recipe was simple enough, though and proved to fill me to perfection.
Breakfast this particular morning included soy-rizo, egg whites and corn tortillas. A good cup of Java proved that cinnamon rolls as dessert isn't what I seem to think I need as I was beyond satisfied and even more excited that my cargos didn't feel the need to pop open without my permission. This is especially important since breakfast is my favorite meal of the day. Sadly, today's did not include any Mimosa's...
Breakfast:
2 Tbsp. Grape Seed Oil
3-egg whites
1/4 package of Soy-Rizo
2 Corn Tortillas
1 cup of Coffee
